A few of you have asked for the recipe to my Homemade Oreo Cookies But With Mint Icing Instead of Regular/Whoopie Pies (?).  I posted it on Ange’s recipe blog a while ago before Jen and I started our own.  Here be THE LINK.  All I did to change the icing was add 3/4 tsp. of peppermint extract and a buttload of green food colouring.  Enjoy!
